Zesty Penne Pasta
ZESTY PENNE PASTA
INGREDIENTS
1 lb Penne pasta
6 Tbsp Extra virgin
olive oil
2 Tbsp Chopped
garlic
1 Tbsp Lemon
zest, minced
1 Tbsp Lime
zest, minced
1/2 C. AzarÒ Pistachios, shelled and roasted
1/2 Bunch
cilantro, chopped
Salt and freshly
ground pepper to taste
DIRECTIONS
Cook pasta and
drain. Sauté garlic in olive oil. Add zests and
nuts and toss with pasta. Add cilantro and season to taste.
NOTE:
Lemon or lime zest
is the colored outer portion of the fruit without the pale bitter pith
underneath. One lemon will give 1 teaspoon zest while 3 lemons will give 1
tablespoon.
Makes 3-4 servings.
