Shrimp Salad with Coconut Cashews & Papaya 

Ingredients


  • 1/3 c. Azar Coconut Cashews
  • 2 c. Shredded Romaine
  • 1 ea. Papaya or Mango (cubed)
  • 1/4 c. Toasted Coconut
  • 1/2 c. Diced Celery
  • 1/4 c. Papaya Salad Dressing
  • 1/2 lb. Cooked Shrimp
  • 1 tsp.  Hot Sauce (optional)
  • Salt and Pepper to taste 
Directions

In a large mixing bowl, combine all ingredients except coconut and dressing.  Add dressing just before serving, toss and sprinkle coconut on each serving.


Serves  2


Additional serving suggestion:  Serve as a wrap in a Spinach Tortilla
